The most advanced elaboration technology

The most advanced technical developments in the oenological and chemical sectors are used to elaborate this sparkling wine. The base wine is made with the same varieties that we use to make our cava. Next, the Spinning Cone Columns are used for the molecular deconstruction of the beverage. Thanks to this technique the big and heavy molecules of alcohol are separated from volatile aromas thus the alcohol is extracted. After that, the concentrated flavor and aroma compounds are fully incorporated into the dealcoholized wine,  so we obtain a fresh, well-balanced sparkling wine. It is a very suitable option for those who do not want to drink alcohol because they do not like it, do not tolerate it or are not allowed to consume it for medical reasons.
