The days are getting shorter, and temperatures are starting to drop. Autumn is approaching and inevitably puts an end to the endless days of the summer months. Even so, autumn also has good things!! And it is now when we can enjoy seasonal foods that, in addition to delighting our palates, prepare our body for lower temperatures: stews, soups or more caloric dishes that we incorporate into our diet. We have selected five seasonal autumn dishes which help to strengthen our immune system and a wine, which, due to its intense character and weight, can accompany the dishes we prepare this autumn.
Here are 5 seasonal and local products not to forget about this time of a year
FIGS
Like plums, figs have high percentages of antioxidants that protect our immune system. In addition, this fruit has a significant amount of fibre, which helps intestinal traffic and prevents constipation, in addition to preventing diseases of the digestive and cardiovascular systems. They are also an important source of potassium, calcium, and magnesium, as well as vitamin A, essential to keep the immune system in good condition in the face of changes in temperature and the arrival of cold. Their best time is at the end of summer and they can be found until the last days of October. In addition to its properties, it is a food that is ideal to prepare in autumn. We can make a salad of figs with goat cheese and walnuts with molasses vinaigrette or a duck confit with potatoes in a fig sauce.
MUSHROOMS
Mushrooms are a very complete food, thanks to their nutritional and healthy properties. It is a food that includes a high percentage of water, in an approximate proportion of between 80 and 90%. Consequently, we can also say that it is a low-calorie food since it provides between 25 and 35 calories per 100 grams consumed. The vitamin content is high and those of group B, such as B2 and B3, stand out especially. As for vitamin B3, it enhances growth and the use of energy. There are many delicious recipes to enjoy this seasonal food, but we can choose to make eggs on a plate with any of the mushrooms of the moment, due to their simplicity and flavour. We can also make mountain rice with trumpets of death mushrooms, or peas with girolles. Other simple dishes are chicken with mushrooms or noodles with shiitake, the mushroom with the highest fibre content of all the cultivated ones.
WALNUTS AND CHESTNUTS
The chestnut is the quintessential seasonal dry fruit. In fact, Catalonia has a festival around this food at the end of October. It is a seasonal product, rich in vitamins C, A and E, calcium, phosphorus, and magnesium, which helps keep the bone system and teeth in good condition. Walnuts will also be very present during this new season, not only will they provide you with the energy you will need with the arrival of the cold, but they also contain healthy fats that will help regulate cholesterol during this period in which more caloric dishes are included.
VEGETABLES SUCH AS SWEET POTATOES, PUMPKIN OR BROCCOLI
Autumn is also the time to harvest potatoes, sweet potatoes and pumpkins. Approaching November, cabbages, broccoli or leeks will appear. Specifically, it offers us many possibilities in the kitchen, we can make it as a cream, and cook it in the oven with other vegetables. The large amount of vitamin A it contains helps your body fight infections and diseases by strengthening the immune system. Pumpkin has almost 20 per cent of the recommended daily amount of vitamin C, which helps fight colds. Broccoli contains vitamins A, C and E, as well as many other antioxidants and fibre. It is one of the healthiest vegetables that can be included in the diet. To enhance its properties, it is better not to overcook it. Curry stews are a delight now that the heat has slowed down and you want more.
CITRUS
In cold weather, citrus fruits provide us with vitamin C, which helps us shorten the duration of colds, and stimulates the immune system; they cleanse the organs, help regeneration and eliminate harmful and toxic substances from the body. Vitamin C is a good ally to strengthen our defense forces before the cold and flu season arrives. Among the recipes where we can incorporate citrus, we can make orange chicken or vegan quinoa with citrus touches.
